Beef Fried Rice
Ingredients
| 600g | beef fillet, cubed |
| 2 | onions, peeled |
| 2 cloves | of garlic |
| 1 tsp | ground pepper |
| 4 tbsp | corn or vegetable oil |
| 3 ¼ litre | of water |
| 200g | diced tomato |
| 2 | chillies |
| 2 tbsp | tomato paste |
| ½ litre | of water |
| 300g | rice |
| 2 | Renzo stock cubes |
Instructions
- Place in a saucepan two tablespoons of oil, the meat and the onions. Add the chopped garlic and pepper. Pour in ¾ litre water and the 2 Renzo Jumbo cubes. Bring to the boil, cover and cook on a low heat for approx. 1½ hours.
- Strain the meat and discard the onion. Heat a separate saucepan with oil. Sauté the meat for 5 minutes until golden and remove.
- Add to the oil the tomato and chopped chilli and reheat for a few minutes. Add the tomato paste, ½ litre of juice from the meat and another ½ litre of water. Bring to the boil. Add the meat and the rice, cover and cook for 20 minutes. Leave to rest. Serve with chillis (optional).
