Biryani

Ingredients

1 kgchicken
750 grice (basmati)
175 mloil
250 gonions, sliced
200 gwhipped yogurt
250 gtomatoes, chopped
½ cupchopped mint leaves
½ cupchopped coriander leaves
to tastesalt (approx. 3 tbsp for boiling rice)
½ cupwater (for mixing Shan Biryani Mix)

Instructions

  1. Heat oil in a pot and fry onions until golden brown.
  2. Add chicken and sauté briefly.
  3. Add yogurt and 2 cups of water. Stir well.
  4. Cover and cook on low heat until the chicken is tender.
  5. Add chopped tomatoes and stir-fry until the oil separates from the gravy.
  6. In a separate large pot, boil 15 cups of water with 3 tablespoons of salt.
  7. Add soaked rice and boil until it is ¾ cooked. Drain thoroughly.
  8. Layer half the cooked rice in a large pot. Pour the chicken curry over it.
  9. Top with remaining rice. Sprinkle chopped coriander and mint leaves on top.
  10. Cover and cook on low heat for 5–10 minutes (dum).
  11. Serve hot and enjoy your flavorful biryani.
